Me? I love ice cream. It's delicious, I mean what's not to love? My friend was pretty amped when I suggested we make our own 'winter mint chip.' But are you saying..."Hey...whoa, slow down...thought this website was about nutrition?" Well, you're right, it is, but being healthy doesn't mean you have to give up your favorites forever. It simply means you need to make adjustments.
Many of my clients seem to reap multiple benefits when they get rid of dairy, and everyone does better by cutting down on sugar. So how do you make ice cream without those two big guns? Well, there are a few ways, but my personal favorite is using full-fat coconut milk (so creamy you won't miss the dairy) and a more pure sweetener - honey, brown rice syrup, a little molasses or occasionally agave nectar.
Check out an old favorite recipe - Mexican Chocolate Peanut or hit up Elana's Pantry for her easy Mint Chip. Do I suggest indulging in this everyday? No. But what I can say is when you have a craving that only ice cream can combat, well then here you go. Enjoy. You can feel good about this indulgence.
